WHY is the pizza called Margherita?

The royal couple, while staying in Naples, were fed up with gourmet dishes and wished for something simple. In order to satisfy Queen Margherita’s request, they decided to invite the local baker, Raffaele Esposito, to the royal kitchen. With the help of his wife Rosina Brandi, he prepared three pizzas for the royal couple: with ham, cheese and basil; with garlic, oil and tomatoes; and with mozzarella, basil and tomatoes.

The sight of the third pizza resembled the national flag: the white, green and red colors showed the patriotism of the common Italian people.

The taste of the pizza captivated the royal family. Queen Margherita herself sent Esposito a message of thanks. He never dreamed of a better advertisement for his business. Displaying the letter in a frame on the wall of his establishment, he named the so-called patriotic pizza “Margherita” and made it his signature dish in the name of glorious Italy and in gratitude to the Queen.
